
Lychee Shrimp Balls
A Cantonese delicacy combining fresh shrimp with juicy lychees, featuring crispy exterior and tender interior with sweet-savory flavors.
Ingredients
- 10.5 oz peeled shrimp
 - 10 fresh lychees (or canned)
 - 1 egg white
 - 1 tsp cornstarch
 - 1/4 tsp white pepper
 - 1/2 tsp salt
 - Breadcrumbs as needed
 - Vegetable oil for frying
 
Steps
- Pat dry shrimp and mash into paste with back of knife
 - Mix with egg white, cornstarch, pepper and salt until sticky
 - Remove lychee pits while keeping fruit intact
 - Wrap shrimp paste around lychees to form balls
 - Coat evenly with breadcrumbs
 - Fry at 340°F until golden (about 2 minutes)
 - Drain on paper towels
 
Tips
For better texture, use chilled shrimp. Maintain oil temperature to avoid burning
