Ingredients

  • 300g pork (lean or belly, sliced)
  • 2-3 green bell peppers (sliced)
  • 1 red bell pepper (sliced, optional)
  • 2 cloves garlic (sliced)
  • 1 small piece ginger (sliced)
  • 2 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tbsp cooking wine (optional)

Steps

  1. Slice the pork and marinate with light soy sauce, dark soy sauce, sugar, salt, white pepper, cornstarch, and cooking wine (if using) for 15 minutes.
  2. Heat vegetable oil in a wok or skillet, add sliced garlic and ginger, and stir-fry until fragrant.
  3. Add the marinated pork slices and stir-fry quickly until the pork changes color.
  4. Add sliced green bell peppers and red bell peppers (if using), and continue to stir-fry for 2-3 minutes until the peppers are tender but still crisp.
  5. Taste and adjust seasoning with salt or sugar if needed. Stir well and serve hot.

Tips

The key to this dish is to keep the pork tender and the peppers slightly crisp. For a spicier version, add a pinch of chili powder or fresh chili peppers.
