Ingredients
500g pork belly
3 cloves garlic
2 inch ginger
4 green onions
3 tbsp doubanjiang
1 tbsp douchi
2 tbsp soy sauce
1 tbsp sugar
1 tbsp rice wine
1/2 tsp white pepper
2 tbsp vegetable oil
1 tbsp sesame oil
lettuce leaves for serving
Steps
Boil pork belly in water for 20-30 minutes until partially cooked
Remove and let cool, then slice into thin pieces about 1/4 inch thick
Heat vegetable oil in a wok over medium-high heat
Add garlic, ginger, and green onions, stir-fry until fragrant
Add doubanjiang and douchi, stir-fry for 1 minute until oil turns red
Add pork slices, stir-fry for 2-3 minutes
Add soy sauce, sugar, rice wine, and white pepper
Continue stir-frying for another 2 minutes
Drizzle with sesame oil and mix well
Serve hot on a bed of lettuce leaves
Tips
Have all ingredients prepped and measured before you start cooking. Chinese stir-fry moves fast once the wok is hot - there is no time to chop or measure mid-cook.
