Ingredients
200g silken tofu
50g bamboo shoots
2 eggs
2 tbsp rice vinegar
1 tbsp chili oil
1 tbsp soy sauce
1 tsp sesame oil
1/2 tsp white pepper
2 green onions
1 tbsp cornstarch
4 cups chicken broth
salt to taste
Steps
Cut tofu into thin strips and slice bamboo shoots
Beat eggs and set aside
Bring chicken broth to a boil in a pot
Add tofu strips and bamboo shoots, simmer for 2 minutes
Mix rice vinegar, soy sauce, and cornstarch with a little water
Pour the mixture into the soup, stir gently
Slowly drizzle in beaten eggs while stirring to create egg ribbons
Season with salt and white pepper
Remove from heat, add sesame oil and chili oil
Garnish with chopped green onions
Serve hot immediately
