Ingredients
500g chicken breast
1 cup cornstarch
2 eggs
1/2 cup orange juice
2 tbsp soy sauce
2 tbsp rice vinegar
3 tbsp sugar
1 tbsp orange zest
3 cloves garlic
1 inch ginger
1/4 cup vegetable oil
1 tbsp cornstarch (for sauce)
salt
white pepper
green onions for garnish
Steps
Cut chicken breast into 1-inch cubes
Season with salt and white pepper
Beat eggs and coat chicken, then dredge in cornstarch
Deep fry chicken at 350°F (175°C) until golden and crispy, about 4-5 minutes
Remove and drain on paper towels
In a bowl, mix orange juice, soy sauce, rice vinegar, sugar, and cornstarch
Heat oil in a wok, sauté minced garlic and ginger until fragrant
Add orange zest and cook for 30 seconds
Pour in the sauce and bring to a boil
Add crispy chicken and toss to coat evenly
Cook for 1-2 minutes until sauce thickens
Garnish with green onions
Serve immediately with steamed rice
