
Nanchang Stir-Fried Rice Noodles
A signature Jiangxi snack featuring chewy rice noodles stir-fried with vegetables and meat for a flavorful dish.

Ingredients
- 200g dried rice noodles
- 100g pork (julienned)
- 1 egg
- 1 cup bean sprouts
- 1/2 cup carrot (julienned)
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
- 2 cloves garlic (minced)
- 2 tbsp vegetable oil
- Salt and pepper to taste
Steps
- Soak dried rice noodles in warm water for 15 minutes until softened. Drain and set aside.
- Heat oil in wok, scramble egg and set aside.
- In same wok, add more oil and sauté garlic until fragrant. Add pork and cook until color changes.
- Add carrot and bean sprouts, stir-fry quickly for 1-2 minutes.
- Add softened noodles with light soy sauce, dark soy sauce and sugar. Stir-fry over high heat.
- Finally mix in scrambled egg and season with salt and pepper.
Tips
Use high heat and quick movements when stir-frying to prevent noodles from sticking.
