Nanchang Stir-Fried Rice Noodles

A signature Jiangxi snack featuring chewy rice noodles stir-fried with vegetables and meat for a flavorful dish.

Ingredients

  • 200g dried rice noodles
  • 100g pork (julienned)
  • 1 egg
  • 1 cup bean sprouts
  • 1/2 cup carrot (julienned)
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 2 cloves garlic (minced)
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Steps

  1. Soak dried rice noodles in warm water for 15 minutes until softened. Drain and set aside.
  2. Heat oil in wok, scramble egg and set aside.
  3. In same wok, add more oil and sauté garlic until fragrant. Add pork and cook until color changes.
  4. Add carrot and bean sprouts, stir-fry quickly for 1-2 minutes.
  5. Add softened noodles with light soy sauce, dark soy sauce and sugar. Stir-fry over high heat.
  6. Finally mix in scrambled egg and season with salt and pepper.

Tips

Use high heat and quick movements when stir-frying to prevent noodles from sticking.
