Steamed Scallops with Garlic Vermicelli

Ingredients

  • Fresh scallops 12 pieces (in shell)
  • Vermicelli noodles 50g
  • Garlic 8 cloves (minced)
  • Scallions 2 stalks (chopped)
  • Red chili 1 (diced)
  • Soy sauce 3 tbsp
  • Oyster sauce 1 tbsp
  • Cooking oil 3 tbsp
  • Salt to taste

Steps

  1. Soak vermicelli in warm water until soft, drain and cut into shorter lengths.
  2. Clean scallops thoroughly, removing the muscle and keeping them in their shells.
  3. Heat oil in a pan, sauté minced garlic until golden and fragrant.
  4. Place a small amount of vermicelli on each scallop shell.
  5. Place scallop meat on top of vermicelli.
  6. Top each scallop with the sautéed garlic and a drizzle of soy sauce.
  7. Steam over high heat for 5-6 minutes until scallops are just cooked.
  8. Garnish with scallions and red chili. Serve immediately.

Tips

Do not overcook the scallops - they should be just opaque and tender. The garlic oil adds incredible flavor to the vermicelli below.
