Ingredients

  • Lamb leg 400g (thinly sliced)
  • Cumin seeds 2 tbsp
  • Dried chili peppers 10 pieces
  • Onion 1 (sliced)
  • Garlic 4 cloves (sliced)
  • Ginger 1 piece (sliced)
  • Cooking wine 1 tbsp
  • Soy sauce 1 tbsp
  • Salt to taste
  • Vegetable oil 3 tbsp

Steps

  1. Slice lamb thinly against the grain, marinate with cooking wine and soy sauce for 15 minutes.
  2. Toast cumin seeds in a dry pan until fragrant, set aside.
  3. Heat oil in a wok over high heat until smoking.
  4. Add lamb slices and stir-fry quickly until browned, about 2 minutes.
  5. Remove lamb, add more oil if needed.
  6. Sauté ginger, garlic, and dried chilies until fragrant.
  7. Add onion slices and stir-fry for 1 minute.
  8. Return lamb to wok, add toasted cumin seeds and salt.
  9. Toss everything together quickly and serve hot.

Tips

High heat and quick cooking are essential for tender lamb. The cumin seeds should be toasted to release their full aroma.
