Ingredients

  • 300g sea cucumber (rehydrated)
  • 3 scallions
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 1 tbsp cooking wine
  • 1 cup stock or water
  • 1 tbsp vegetable oil
  • 1 tsp minced ginger

Steps

  1. Rehydrate the sea cucumber and cut into bite-sized pieces.
  2. Wash and cut the scallions into sections.
  3. Heat oil in a pan and sauté the minced ginger until fragrant.
  4. Add the scallions and stir-fry until slightly browned.
  5. Add the sea cucumber pieces and stir-fry evenly.
  6. Pour in light soy sauce, dark soy sauce, cooking wine, and sugar, continuing to stir-fry.
  7. Add stock or water, bring to a boil, then simmer for 10 minutes.
  8. Serve once the sauce has thickened.

Tips

Change water frequently when rehydrating sea cucumber to ensure it's fully softened. Avoid high heat during cooking to prevent the sea cucumber from becoming tough.
