  • 2 medium tomatoes
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1 tbsp cooking wine
  • 1 tsp cornstarch
  • 2 tbsp cooking oil
  • 1 cup water
  • 1 green onion (cut into sections)
  • 2 slices ginger

Steps

  1. Marinate fish fillets with cooking wine, salt, and white pepper for 10 minutes.
  2. Cut tomatoes into chunks and set aside.
  3. Heat oil in a pan, sauté ginger slices and green onion until fragrant.
  4. Add tomato chunks and stir-fry until soft, then add tomato paste and mix well.
  5. Pour in water, bring to boil then simmer for 5 minutes.
  6. Gently add marinated fish fillets and cook until they turn white (about 3 minutes).
  7. Mix cornstarch with water to make slurry, pour into pan to thicken sauce while stirring gently.
  8. Finally add sugar to taste, garnish with chopped green onion before serving.
