  • Potato 2 medium (about 300g)
  • Eggplant 1 medium (about 300g)
  • Green bell pepper 2
  • Garlic 4 cloves (minced)
  • Green onion 2 stalks (chopped)
  • Soy sauce 2 tablespoons
  • Sugar 1 teaspoon
  • Salt to taste
  • Vegetable oil for frying

Steps

  1. Peel the potato and cut into bite-sized pieces. Cut the eggplant into similar-sized pieces. Remove seeds from green peppers and cut into squares.
  2. Heat oil in a wok over medium-high heat. Fry potato pieces until golden brown and cooked through, about 5-6 minutes. Remove and drain.
  3. In the same oil, fry eggplant pieces until soft and lightly browned, about 3-4 minutes. Remove and drain.
  4. Leave about 2 tablespoons of oil in the wok. Add garlic and green onions, stir-fry until fragrant.
  5. Add the fried potatoes, eggplant, and green peppers back to the wok. Stir-fry for 1-2 minutes.
  6. Add soy sauce, sugar, and salt. Toss everything together until well combined and heated through.
  7. Transfer to a serving plate and serve hot with steamed rice.

Tips

For best results, fry the vegetables separately as they have different cooking times. Soaking eggplant in salted water for 10 minutes before frying helps reduce oil absorption.
