Ingredients

  • Glass noodles 150g
  • Ground pork 100g
  • Doubanjiang 2 tbsp
  • Garlic 4 cloves
  • Ginger 5g
  • Scallions 15g
  • Light soy sauce 2 tbsp
  • Dark soy sauce 1 tbsp
  • Sugar 1 tbsp
  • Cooking wine 1 tbsp
  • Sichuan pepper powder 1 tbsp
  • Oil as needed

Steps

  1. Soak noodles: Soak glass noodles in warm water until soft (about 30 minutes). Cut to appropriate length, drain.
  2. Cook pork: Heat oil in wok, add ground pork, stir-fry until变色. Add 1 tbsp cooking wine, set aside.
  3. Make base: Add more oil, add doubanjiang, stir until red oil appears. Add minced garlic and ginger, stir until fragrant.
  4. Add pork: Return cooked pork to wok, mix well.
  5. Season: Add light soy sauce, dark soy sauce, sugar, Sichuan pepper powder, stir until fragrant.
  6. Add noodles: Add soaked glass noodles, quickly toss to coat evenly with sauce.
  7. Add water: Add small amount of water (about 100ml) around the edges of wok. Cover and simmer for 2 minutes.
  8. Toss: Open lid, stir-fry on high heat to let noodles absorb the sauce.
  9. Finish: When sauce is mostly absorbed, noodles become glossy. Sprinkle with scallions.
  10. Serve: Transfer to plate. Ants Climbing a Tree is spicy, savory, with chewy glass noodles.

Tips

Tips: 1) Don't soak noodles too long or they'll become too soft; 2) Don't use high heat when cooking noodles; 3) Add water in small amounts, multiple times; 4) Stir quickly throughout to prevent sticking.
