
Braised Eggplant
A classic homestyle dish featuring tender eggplant braised in savory sauce.

Ingredients
- 2 medium eggplants
- 2 tbsp vegetable oil
- 2 garlic cloves (minced)
- 1 tbsp ginger (minced)
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
- 1/2 cup water
- 1 tsp cornstarch (mixed with water)
- 1 green onion (cut into sections)
Steps
- Cut eggplants into chunks and soak in salted water for 10 minutes to remove bitterness. Drain well.
- Heat oil in pan over medium heat. Fry eggplant until lightly browned. Set aside.
- In same pan, sauté garlic and ginger until fragrant.
- Add light soy sauce, dark soy sauce, sugar and water. Bring to boil then add eggplant.
- Simmer covered for 5 minutes until eggplant is tender.
- Thicken sauce with cornstarch mixture. Garnish with green onions before serving.
Tips
Soaking eggplant in salt water prevents excessive oil absorption and helps maintain shape during cooking.
