Char Siu

Char Siu is a classic Cantonese BBQ pork dish known for its glossy red exterior and sweet, savory flavor. The pork is marinated in a mixture of hoisin sauce, soy sauce, honey, and five-spice powder, then roasted until caramelized and tender.

Ingredients

  • Pork shoulder or pork belly 500g
  • Hoisin sauce 3 tbsp
  • Light soy sauce 2 tbsp
  • Dark soy sauce 1 tbsp
  • Honey 2 tbsp
  • Chinese five-spice powder 1 tsp
  • Shaoxing wine 2 tbsp
  • Red fermented bean curd 1 piece (optional, for color)
  • Garlic 3 cloves, minced
  • Sesame oil 1 tbsp

Steps

  1. Cut the pork into long strips, about 2 inches wide and 4-5 inches long.
  2. Mix all marinade ingredients in a bowl until well combined.
  3. Add pork to the marinade, coating thoroughly. Cover and refrigerate for at least 4 hours, preferably overnight.
  4. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  5. Remove pork from marinade, shaking off excess. Place on the wire rack.
  6. Roast for 15 minutes, then flip and baste with remaining marinade.
  7. Continue roasting for another 15-20 minutes until the pork is caramelized and cooked through.
  8. Optional: Broil for 2-3 minutes at the end for extra char.
  9. Let rest for 5 minutes, then slice against the grain and serve.

Tips

For authentic red color, use red fermented bean curd or a few drops of red food coloring in the marinade. For best results, marinate overnight.
