Ingredients

  • 2 medium potatoes
  • 1 green bell pepper (julienned, optional)
  • 2 cloves garlic (sliced)
  • 1 dried chili pepper (cut into sections, optional)
  • 2 tbsp vegetable oil
  • 1 tbsp white vinegar
  • 1 tsp light soy sauce
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/4 tsp white pepper
  • 1 tsp sesame oil (optional)

Steps

  1. Peel the potatoes and cut them into thin strips. Soak in water for 10 minutes to remove excess starch.
  2. Heat vegetable oil in a wok or skillet, add sliced garlic and dried chili pepper sections (if using), and stir-fry until fragrant.
  3. Add the potato strips and green bell pepper (if using), and stir-fry quickly for 2-3 minutes.
  4. Add white vinegar, light soy sauce, salt, sugar, and white pepper. Stir-fry to mix evenly.
  5. Taste and adjust the sourness and spiciness according to preference. Drizzle with sesame oil (if using) and serve.

Tips

The key to this dish is to cut the potato strips evenly and thinly. Cook over high heat and stir quickly to maintain the crispy texture of the potatoes.
