Ingredients

  • Pork belly 500g
  • Rock sugar 40g
  • Soy sauce 3 tbsp
  • Dark soy sauce 1.5 tbsp
  • Shaoxing wine 3 tbsp
  • Ginger 5 slices
  • Scallions 2 stalks
  • Star anise 2 pieces
  • Cinnamon 1 piece
  • Bay leaves 2

Steps

  1. Cut pork into cubes and blanch in cold water with ginger.
  2. Rinse pork with warm water and drain.
  3. Caramelize rock sugar on low heat until amber.
  4. Add pork to sugar and stir to coat.
  5. Add soy sauces and wine, stir to absorb.
  6. Add aromatics and stir until fragrant.
  7. Add hot water to cover pork.
  8. Simmer covered for 1-1.5 hours on low heat.
  9. Uncover and reduce sauce until thick.
  10. Serve hot with rice.

Tips

Use hot water for braising. Caramelize sugar carefully.
