Pork belly 500g
Rock sugar 40g
Soy sauce 3 tbsp
Dark soy sauce 1.5 tbsp
Shaoxing wine 3 tbsp
Ginger 5 slices
Scallions 2 stalks
Star anise 2 pieces
Cinnamon 1 piece
Bay leaves 2
Steps
Cut pork into cubes and blanch in cold water with ginger.
Rinse pork with warm water and drain.
Caramelize rock sugar on low heat until amber.
Add pork to sugar and stir to coat.
Add soy sauces and wine, stir to absorb.
Add aromatics and stir until fragrant.
Add hot water to cover pork.
Simmer covered for 1-1.5 hours on low heat.
Uncover and reduce sauce until thick.
Serve hot with rice.
Tips
Use hot water for braising. Caramelize sugar carefully.
