Dry-Fried Green Beans

A classic Sichuan dish featuring crisp-tender green beans stir-fried with aromatic chilies and Sichuan peppercorns.

Ingredients

  • 1 lb green beans, ends trimmed and snapped in half
  • 2 tbsp vegetable oil
  • 3 garlic cloves, sliced
  • 1 tsp Sichuan peppercorns
  • 2 dried red chilies, cut into segments
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp soy sauce

Steps

  1. Wash and thoroughly dry green beans, snap into 2-inch pieces
  2. Heat oil in wok over medium-high heat until shimmering
  3. Stir-fry green beans until wrinkled, about 5-6 minutes
  4. Push beans aside, add garlic, peppercorns and chilies to bloom aromatics
  5. Season with salt, sugar and soy sauce, toss to combine
  6. Continue stir-frying for 1-2 minutes until beans are tender-crisp

Tips

Maintain high heat throughout cooking to achieve proper texture - the beans should be thoroughly cooked but still crisp.
