
Dry-Fried Green Beans
A classic Sichuan dish featuring crisp-tender green beans stir-fried with aromatic chilies and Sichuan peppercorns.

Ingredients
- 1 lb green beans, ends trimmed and snapped in half
- 2 tbsp vegetable oil
- 3 garlic cloves, sliced
- 1 tsp Sichuan peppercorns
- 2 dried red chilies, cut into segments
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 tbsp soy sauce
Steps
- Wash and thoroughly dry green beans, snap into 2-inch pieces
- Heat oil in wok over medium-high heat until shimmering
- Stir-fry green beans until wrinkled, about 5-6 minutes
- Push beans aside, add garlic, peppercorns and chilies to bloom aromatics
- Season with salt, sugar and soy sauce, toss to combine
- Continue stir-frying for 1-2 minutes until beans are tender-crisp
Tips
Maintain high heat throughout cooking to achieve proper texture - the beans should be thoroughly cooked but still crisp.
