Ingredients

  • 300g pork tenderloin
  • 1 egg
  • 3 tablespoons cornstarch
  • 3 tablespoons all-purpose flour
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 onion
  • 3 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • Vegetable oil for frying

Steps

  1. Cut pork tenderloin into strips about 1cm thick, marinate with salt, pepper, and 1 tablespoon soy sauce for 15 minutes
  2. Mix egg, cornstarch, and flour to make a batter, coat pork strips evenly
  3. Heat oil to 170°C (340°F), fry pork strips until golden and crispy, about 3-4 minutes
  4. Remove and drain on paper towels, then fry again at higher heat for 30 seconds for extra crispiness
  5. Cut bell peppers and onion into chunks, stir-fry quickly and set aside
  6. In a clean wok, combine ketchup, rice vinegar, sugar, and 2 tablespoons water, bring to a simmer
  7. Add cornstarch mixture to thicken the sauce until glossy
  8. Toss in the pork strips and vegetables, coat evenly with sauce and serve immediately

Tips

Double-frying the pork ensures maximum crispiness. The sauce should coat the pork lightly - too much sauce will make it soggy. Serve immediately while still crispy!
