Ingredients

  • Fresh shrimp 300g
  • Longjing tea leaves 3g
  • Egg white 1
  • Starch 1 tbsp
  • Shaoxing wine 1 tbsp
  • Salt to taste
  • Chicken stock 2 tbsp
  • Vegetable oil 3 tbsp

Steps

  1. Peel and devein shrimp, rinse and pat dry
  2. Marinate shrimp with egg white, starch, and salt for 15 minutes
  3. Brew Longjing tea with hot water, set aside the leaves
  4. Heat wok with oil, quickly stir-fry shrimp until just cooked
  5. Add tea leaves and chicken stock, toss gently
  6. Season with salt and Shaoxing wine, serve immediately

Tips

Use premium Longjing tea for the best flavor. Do not overcook the shrimp to maintain tenderness.
