Ingredients

  • Whole chicken 1 (about 1.5kg)
  • Lotus leaves 2-3 pieces
  • Pork belly 100g
  • Shiitake mushrooms 50g
  • Bamboo shoots 50g
  • Ginger 30g
  • Scallions 5 stalks
  • Shaoxing wine 3 tbsp
  • Soy sauce 3 tbsp
  • Oyster sauce 2 tbsp
  • Five-spice powder 1 tsp
  • Salt to taste
  • Clay or aluminum foil for wrapping

Steps

  1. Clean the chicken and marinate with Shaoxing wine, soy sauce, five-spice powder, and salt for 4 hours or overnight
  2. Dice pork belly, mushrooms, and bamboo shoots. Stir-fry with seasonings until fragrant
  3. Stuff the chicken with the prepared filling and wrap tightly with lotus leaves
  4. Cover with clay (or aluminum foil) to create a sealed package
  5. Bake at 180°C (350°F) for 4-5 hours until the chicken is tender
  6. Crack open the clay and serve the aromatic chicken immediately

Tips

The traditional clay wrapping creates a unique flavor. For home cooking, aluminum foil can be used as a substitute.
