Ingredients

  • Hand-pulled noodles 400g
  • Ground pork 200g
  • Yellow bean sauce 4 tbsp
  • Sweet bean sauce 2 tbsp
  • Cucumber 1
  • Carrot 1
  • Bean sprouts 100g
  • Soybeans 50g
  • Ginger garlic scallion as needed
  • Cooking wine 1 tbsp
  • Sugar 1 tbsp
  • Sesame oil少许

Steps

  1. Prepare toppings: Cut cucumber and carrot into thin strips. Rinse bean sprouts. Soak soybeans overnight and cook until tender.
  2. Make sauce: Heat oil in wok, add minced ginger, garlic, and scallion. Stir until fragrant.
  3. Cook pork: Add ground pork, stir-fry until变色 and oil releases.
  4. Add sauce: Add yellow bean sauce and sweet bean sauce, stir on low heat until fragrant.
  5. Season: Add cooking wine and sugar, continue stirring.
  6. Simmer: Add a little water, simmer on low heat for 5 minutes to let flavors meld.
  7. Cook noodles: Boil large pot of water, add noodles, cook until done (about 3-4 minutes).
  8. Rinse: Drain noodles, rinse with cold water, drain well.
  9. Assemble: Place noodles in bowl, ladle sauce on top.
  10. Serve: Top with cucumber, carrot, bean sprouts, soybeans, drizzle sesame oil. Mix well before eating.

Tips

Tips: 1) Cook sauce on low heat to develop flavor; 2) Cold rinse makes noodles more chewy; 3) Adjust toppings to preference.
