Ingredients

  • Chicken wings 500g (mid-joint preferred)
  • Cola 330ml (1 can)
  • Soy sauce 3 tablespoons
  • Cooking wine 2 tablespoons
  • Ginger 3-4 slices
  • Garlic 3 cloves (minced)
  • Green onion 2 stalks (cut into sections)
  • Vegetable oil 2 tablespoons
  • Salt to taste

Steps

  1. Wash chicken wings and pat dry. Make 2-3 small cuts on each wing for better flavor absorption.
  2. Heat oil in a pan over medium heat. Add ginger slices and garlic, stir until fragrant.
  3. Add chicken wings to the pan, fry until both sides are golden brown, about 3-4 minutes per side.
  4. Pour in cooking wine and soy sauce, stir to coat the wings evenly.
  5. Add cola and bring to a boil. Reduce heat to low and simmer for 15-20 minutes.
  6. Turn the wings occasionally during simmering for even coloring and flavor.
  7. When the sauce thickens and coats the wings nicely, increase heat to reduce the sauce further.
  8. Add green onion sections, stir briefly, and season with salt to taste.
  9. Serve hot with steamed rice. The glossy, caramelized wings are irresistible!

Tips

For best results, use regular cola rather than diet versions as the sugar helps create the signature glossy glaze. You can also add a star anise or two for extra aroma during simmering.
