Ingredients

  • Pork ribs 500g
  • Ginger 3 slices
  • Scallion 2 stalks
  • Cooking wine 2 tbsp
  • Light soy sauce 3 tbsp
  • Dark soy sauce 1 tbsp
  • Rock sugar 30g
  • Star anise 2
  • Cinnamon stick 1 small piece
  • Water as needed

Steps

  1. Blanch pork ribs in boiling water for 2 minutes, remove and rinse
  2. Heat oil in a wok, add rock sugar and cook until melted and caramelized
  3. Add pork ribs and stir-fry until evenly coated with caramel
  4. Add ginger, scallion, star anise, cinnamon and stir-fry until fragrant
  5. Add cooking wine, light soy sauce, dark soy sauce
  6. Add hot water to cover the ribs
  7. Bring to a boil, then reduce heat and simmer for 45 minutes
  8. Turn up heat to reduce sauce until thick and glossy
  9. Serve hot, garnished with chopped scallion

Tips

Blanching the ribs removes impurities for a cleaner taste. Simmering slowly ensures tender meat.
