Ingredients

  • 1 whole fish (about 2 lbs, bass or cod recommended)
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp cooking wine
  • 1 tbsp honey
  • 2 tsp chili powder
  • 1 tsp five-spice powder
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 1/2 cup potatoes (cubed)
  • 1/2 cup carrots (sliced)
  • 1/2 cup onions (sliced)
  • 2 tbsp vegetable oil

Steps

  1. Clean the fish and make a few cuts on both sides for better flavor absorption.
  2. In a bowl, mix soy sauce, dark soy sauce, cooking wine, honey, chili powder, five-spice powder, minced ginger, and minced garlic to make the marinade.
  3. Coat the fish evenly with the marinade and let it sit for 30 minutes.
  4. Preheat the oven to 400°F (200°C).
  5. Line a baking tray with foil and brush with vegetable oil. Place the marinated fish on the tray.
  6. Spread the potatoes, carrots, and onions around the fish.
  7. Bake for 20-25 minutes until the fish is cooked through and golden brown.
  8. Garnish with chopped green onions and cilantro before serving.

Tips

Flip the fish halfway through baking for even cooking. Add more chili powder if you prefer a spicier taste.
