  • Light soy sauce 2 tbsp
  • Dark soy sauce 1 tbsp
  • Oyster sauce 1 tbsp
  • Cornstarch 1 tbsp
  • Cooking wine 1 tbsp
  • Salt to taste
  • Oil as needed
  • Steps

    1. Slice beef: Cut beef against the grain into thin slices (about 3mm thick), place in a bowl.
    2. Marinate: Add 1 tbsp light soy sauce, 1 tbsp cooking wine, 1 tbsp cornstarch, and a little oil. Mix well and marinate for 15 minutes.
    3. Prepare broccoli: Cut broccoli into florets, peel and slice the stems. Boil water with a little salt and oil, blanch broccoli for 1 minute, drain.
    4. Stir-fry beef: Heat wok with hot oil (about 180°C), add beef slices, stir quickly until color changes (about 30 seconds), set aside.
    5. Aromatics: Leave some oil in wok, add minced garlic and ginger, stir until fragrant.
    6. Add broccoli: Add broccoli, stir-fry briefly. Season with 1 tbsp oyster sauce, 1 tbsp light soy sauce, and salt.
    7. Add beef: Return beef to wok, stir-fry quickly on high heat.
    8. Thicken: Drizzle some water cornstarch mixture to coat ingredients.
    9. Serve: Transfer to plate and serve hot.

    Tips

    Tips: 1) Slice beef against grain; 2) Add oil when marinating to retain moisture; 3) Do not overcook beef; 4) Stir-fry on high heat throughout.
